Butternut Squash Soup a la Wendy

Wendy is open-minded and I can always expect a fair opinion on any subject.

She is also a quiet cook. I know she prepares delicious meals, but she’s not a braggart.

She made a batch of butternut squash soup. She shared. Thick rich creamy and satisfying. So much so that I am going to do a food swap with her. Soup for salad. I think I’m getting the best of the bargain, but she defers.

Torre Caffe Italiano Bellingham WA

I’ve been here before. I wanted to revisit for lunch.

I was looking for meatball paninni and discovered pesto lasagna. Oh, how delicious. There were many layers of pasta and pesto with little green beans peppered in topped with pignoli nuts. The portion was huge. It came with a fresh spring salad with walnuts and cranberries, shaved parmigiano-reggiano on top (Italian vinaigrette of course). I saved half for dinner and shared with my son. He is now a lasagna lover, too.

I will report again from Torre Caffe when I have room dessert.

Ralf’s Pretzel Bakery Bellingham

There is one vendor NEVER bypassed at the Bellingham Farmer’s Market: it’s  Ralf’s Bavarian Pretzels. How can you choose? -salami/swiss/cream cheese on a pretzel bun, a Nutella sandwich stick, a cheese stick and pretzels big and small. My daughter discovered Nutella at the store and pleaded I buy some (of course I’ve known about Nutella all my life – I was just trying to keep it out of the house).

For the past few years I wished they had a storefront open during the week I could go to with my children. This month my wish came true! Ralf’s Pretzel Bakery is open in the Market Depot and looks great.

I wonder if they’ll get a liquor license so I could have some beer with my pretzel…

Golf Carts and Apple Turnovers

Q: Where can you go to drive a golf cart through apple orchards and eat the BEST apple turnovers?

A: BelleWood Acres

BelleWood Acres is not a u-pick, but it is a u-drive! As in u get to drive a golf cart all around and through the orchard (you can pick yummy little crab apples planted between the other apple trees – for free). My girlfriend had to drag me out today, but I’m glad for it. It was worth hearing the kindergartener’s scream: ‘I’m scared!’ when I drove the golf cart! They sit backwards strapped in. While I drove, my friend ate her apple turnover (devoured). And we didn’t just drive it around once, but twice – I gotta get out more…

Another bonus was I met Heather today – soooo nice. Dorie lets her run the kitchen and WOW what a prize. The store case is filled with delicious baked goods (cookies, turnovers). And you can buy Heather’s apple pie frozen with directions to bake (no one will ever know). The farm store sells apples (many varieties) and many foods made with their apples (butter, chips), vegetables and house ornaments for the holidays.

It’s a short drive north on Hannegan, left on ten mile – follow the signs. Or visit them at the Farmer’s Market on Saturday. I asked them if they had brought the golf cart. Sadly, no. There was no room in the back of the truck.
