Northwest Christmas breakfast

Vegan Pancakes (yes they taste good oh non-believer)

In a medium bowl combine the following dry ingredients:

  • 1 cup unbleached white flour
  • 1/4 cup whole wheat pastry flour
  • 2 tablespoons cane sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • cinnamon to taste

In a separate bowl combine the following liquid ingredients:

  • 2 tablespoons canola oil
  • 1/2 cup water
  • 3/4 cup soy milk
  • 1/2 teaspoon vanilla
  • 3/4 cup frozen blueberries (opt)

Heat your pan/griddle to med-high heat and use 1/4 cup batter for each pancake – you know what to do!

  1. Oh these sound good. I wish I had read this before I went to the store so I could have picked up some blueberries! Tomorrow is my last lazy morning before I go back to work–I may just have to make pancakes for breakfast… Thanks for the recipe!

  2. Wow these are SOOO good! I made them this morning with strawberries since I had no blueberries and they were amazing–so awesome I had to write about them today–thanks again!!
